One of Britain's Favourite Confections
Many people believe that fudge was a British invention. The quintessentially British confection. There are several different types, such as the toffee style fudge synonymous with Devon and Cornwall, the distinctive Scottish tablet fudge, plus all the diverse varieties made in Wales. Each region of Britain has developed its own version of fudge. Then, there is the more commercial type of fudge produced by confectioners like Cadbury's, molded into bars and covered with chocolate, the famous 'finger of fudge'.
Fudge is undoubtedly one of Britain's favourite confections, but one which the major confectioners have not widely developed, which is good, since it has resulted in each region of Britain personalizing its own style, creating variety and diversity expanding into a wonderful range of flavours and textures, and assisting not just the survival of, but the blossoming of this confection.
Putting the record straight
However, before going further, it is probably wise to put the record straight and reveal that fudge is in fact an America invention. Records and recipes dating back to 1886 trace the origins to a batch of 'bungled (or fudged)' caramels made on February 14th 1886 - hence the name fudge. Putting Midlands Fudge on the British Food Map
